This large study of 238,000 people failed to link consumption of nitrosamines, nitrates or nitrites in cured meats with brain tumors.
Perhaps the researchers did not know that vegetables, particularly green leafy types, provide the main dietary source of nitrates.
Apparently they also have not read the data indicating that dietary nitrates appear likely to confer benefits, and as noted in Calls To Study Health Benefits Of Nitrate, Nitrite:
Following the much-vaunted Dietary Approaches to Stop Hypertension (DASH) diet, which produces beneficial reductions in blood pressure, results in an intake of nitrate of 550 per cent the World Health Organization’s Acceptable Daily Intake (ADI), according to findings published in the American Journal of Clinical Nutrition.
I have to wonder if these "researchers" stay abreast of the research in their apparent fields of specialization.
